How exactly do you add a second fade when playing with paint schemes? I can only see the one, but not how to add another. I'm sure I'm missing something.

4 color fade
You don't actually create a second fade. The difference is that as an alternative to a two colour fade, you can now select a 3 colour or a 4 colour fade. The menu options are shown below:
